Development of a digital Service for matching regional organic products during menu creation in put-of-home catering

Project description

Large-scale catering should adopt regional and eco-friendly approaches. We believe
that combining digitalization, promoting organic foods, and incorporating local
ivalue-added elements aligns with political objectives and evolving consumer
preferences. This shift can lead to sustainable procurement practices in large
catering establishments. By integrating a digital solution into existing enterprise
resource planning Systems, we can simplify and streamline the ordering of regional
organic and conventional products. This approach can seamlessly integrate into daily
operations. Regional managers in Bio-Musterregionen are actively exploring ways to
icoordinate large-scale kitchen processes with regional organic producers. To
illustrate this, we plan to conduct a regional case study in collaboration with the
ßio-Musterregionen of Hohenlohe and Heilbronner Land.

Results focusing on practiceorientation

The aim of the project is to develop a platform-based Service that enables large kitchens and canteens
ito create regional organic meals based on local availability. The focus here is on the development of a
idigital solution based on organic supply chain fragments. This solution integrates an algorithm that
[makes the diversity in menu planning manageable. In addition, recipe suggestions based on the
lalgorithrrTs results, taking into account regional product availability and kitchen needs, will be
idisplayed from the pool of regionally created recipes. The resulting increased demand for regional
organic products and the required active networking of stakeholders necessitate transparent
irepresentation of existing fragments of an organic supply chain and the establishment of new value
chains.
