Project Title

Design of a fresh-cut-cluster for out-of-home catering in Baden-Württemberg

Project description

Design and development of a fresh-cut duster of (bio-) regionally produced fruit and vegetables from Baden-Württemberg. Fresh-Cuts are pre-processed raw products that are washed/peeled/cut and partly frozen and can therefore be used ready for cooking. In canteen kitchens of out-ofhome catering, these facilitate handling and are less personnel-intensive, which accommodates the strained Staffing of the gastronomy. To this end, regional fruit and vegetable producer organisations, processing Service providers and out-of-home catering Companies are to come together in a digital platform and encourage more "regional" Cooperation.
Thus, an optimal interaction of supply and demand of the respective Companies should take place. The accompanying scientific studies prepare the fact-based basis of this project, carry out pilot tests and clarify the respective needs of the demand and supply side of the actors.

Results focusing on practiceorientation

The core of the results of the project is a digital platform that makes regional Clusters of fruit and
vegetable product supply to out-of-home catering Companies visible throughout Baden-Württemberg.
These clusters are defined by the research Partners on the basis of the knowledge gained in the
project.
In addition, the platform serves as a networking point for supply- and demand-side actors, as well as
the logistics that connect them regionally. This will accelerate the increase in the market share of
(organic) regional fruit and vegetable products and at the same time increase the added value for
domestic producers by expanding marketing and expanding the value chain (by supplementing freshcut-
products).
