Development, production and marketing of meat substitute products based on protein plants with optimized nutritional physiological (VeggieFood TH)
Objective of the operational group was to develop and establish a regional processing and marketing line with meat substitute products. Therefore, all of the raw materials, with expectation of exotic spices, should be produced in the region and the new products should be manufactured in craft companies without the aid of additives. For the establishment of a regional value-added chain the operational group included the supply of regional legumes (cultivation, preparation, processing) as well as the development of products. The examination and development of different processing steps and product took place in a traditional butchers company. Accompanying, the research team carried out sensory tests and nutritional analysis.
The tests show that large-grain legumes are generally well suited for the production of meat substitutes. In combination in meat-reduced products is also possible (e.g. Flexitaler, QMP Jena). Depending on the legume, pre-processing steps are necessary for processing. In order to maintain the regionality of the marketable end products, in addition to expanding the cultivation of legumes, technical installations for processing the raw materials produced in Thuringia are required (e.g. toast plant, peeling plant, or also protein processing plant for the production of semi-finished products (protein paste, protein quark). Technologically, there are no major differences in the processing of the legumes after pre-processing has taken place. In terms of taste, lentils perform best. The control experiments with chickpeas and kidney beans confirmed the lack of breeding of field peas and beans for human nutrition.
