35% Organic regional products in out-of-home catering
With a multi-perspective and transdisciplinary approach, the OPG develops appropriate strategies to increase the regional organic share in state-owned canteens to 30-40% by 2030, and to reduce food losses. In the OPG the entire value chain is represented. The project aims at closking the gap between regional organic agriculture and out-of-home consumption by orienting processing to specific market needs and developing expanded sales markets for selected vegetables (carrot, potato, pumpkin, lentil) in the communal catering districts of Lake Constance, Ravensburg and Constance. Following market and potential analyses, the core of the project will involve participatory research into where optimization potential lies. Services and innovative technical processes will be partially realized as prototypes in the project. Concrete recommendations are expected on how more of these regional organic products can be used in out-of-home consumption in the future.

1) Overview of opportunities and potentials to increase bio-regional commodity use to 30-40% by 2030 through compilation of existing knowledge and project internal market and potential analysis with the OPG-partners and in the project region.
2) Analysis of major barriers such as cost factors, procurement, production and processing in the OPG enterprises and other enterprises and canteens in the project region.
3) Realization and evaluation of pilot projects as a basis for recommendations for action (e.g. use of surpluses, integration of increased digitalization, concepts for control and bundling, preprocessing)
4) Process quality: result of the preliminary research is that there is a lack of communication and cooperation along the entire value chain. Ideally, a new network should be created in the Lake Constance region on the foundation of mutual appreciation and interest in further innovations for the regional organic markets.
