Cultivation and processing phases of buckwheat to gluten-free food in Thuringia
Development and establishment of a network of enterprises in Thuringia and neighboring regions with the aim of the cultivation of high-class quality raw material for the processing to gluten-free food.
1. Development of an network of agricultural enterprises with experiences in cultivation of buckwheat or rather plan to cultivate buckwheat.
2. Development of criterias for plant varieties and quality to the suitability of buckwheat for the processing to gluten-free food.
3. Trial cultivation of different varieties of buckwheat under different regional conditions.
4. Evaluation of the trial cultivation and creation of recommendations for varieties and cultivation under the conditions of Thuringia.
5. Development and optimisation of the technology of cleaning, drying and peeling.
6. Scientific monitoring and analysis of the processing, espec. in regards to added health benefits.
7. Transmission of the results into the practise, amongst others establishment of an offer of gluten-free food for organic market.
Ensure processing and marketing possibilities before cultivation!
Compliance with the legal limit values in the production of gluten-free food, due to the absolute purity of species and varieties of the raw materials, requires a cultivation and quality management that can only be guaranteed under contract cultivation conditions, with intensive advice and control system. This couldn’t be carried out during the course of the project and therefore, alternative utilization and marketing channels had to be sought. Due to the high demands of the retail trade (sale of whole, undamaged kernels with their typical shape and completely free of skins) after hulling the cleaning and sorting is of particular importance for buckwheat. This can be guaranteed by using an optical color sorter, which means a high investment.
