Establishing a Saxon regional value chain: spicy mini-legume meals

Project description

Within the framework of the project, novel mini-legume meals are being developed for sustainable and healthy "spontaneous nutrition". The resulting semi-finished and finished products will be available to all bakers in Saxony after the project.
Farmers and processors, product developers, specialized wholesalers and the bakery trade will act in close cooperation to develop high-quality nutritional solutions and bring them to market. The cultivation methods for the respective crops are to be specifically adapted and optimized for the intended further processing. To support the rapid build-up of legume demand in human nutrition, forward-looking product concepts are being developed from legumes. They are precisely adapted to the current change in nutritional habits.

Results focusing on practiceorientation

The legume-based "mini meals" were developed to market maturity. In addition, further marketable prototypes were created and a range of long-life snack products (sweet and savory) was developed. A closed regional value chain was successfully tested within the project. The two-year cultivation of field beans, peas and lupins (2020/2021) showed positive results. With the exception of the lupin variety used in the project, the legumes proved to be processable on a large scale. The planned establishment of the value chain was prevented by the economic conditions during the implementation period. The lead partner therefore decided to set up its own bakery.
