Integration of climate friendly produced winter wheat into the entire value chain.
The wheat price is usually determined by the raw protein content of the wheat corn, since it is influencing the baking quality of wheat flour. Due to high quality standards with regard to baking characteristics, the intensity of nitrogen fertilization in winter wheat crop is high. However, recent cultivars have clearly improved protein quality, allowing a markedly lower nitrogen fertilization without any lost in quality. By combining different cultivars in specific mixing ratios, high quality wheat flour can be manufactured even with lower protein contents. In this way 20 to 40 kg N ha-1 acreage might be saved, which greatly contributes to reduce the GHG-emissions derived from wheat cultivation. The ‘climate wheat’ project will demonstrate innovative approaches of sustainable high quality baking wheat production along the entire value chain at large scale.
The production of winter wheat for usage in bakery sets high requirements on quality standards. The current standard for quality assessment of winter wheat is the raw protein content, which mainly depends on nitrogen fertilization. The production of nitrogen fertilizers is one of the main drivers of greenhouse gas emissions in wheat productions. The reduction of nitrogen inputs combined with consistent quality parameters would provide huge benefits for the carbon food print of winter wheat production.
Within this EIP Agri project, different systems of nitrogen fertilization were tested in field trials and on real farms for comparing effects on yield, quality and greenhouse gas emissions. The reduction of nitrogen fertilization about 20 kg N/ha barely effected the yield, whereas the protein content decreased. However, the results of RMT showed sufficient baked volumes.
